Haldi is the newest addition to ESF’s line up of permanent vendors. It translates to turmeric in Hindi, a nod to the key spices used in authentic Indian cooking and present in the flavours of Indian street food, rustled up with love at ESF.
At the helm is Madan who’s family comes from a village in the Himalayas, in the North West of India. His parents moved to Delhi, which is where Madan was later born. After studying in Delhi, Madan began his career in highly reputed hotels and restaurants across the city. In 2005, Madan moved to Edinburgh with his family where he’s worked in a number of the city’s best Indian restaurants. Madan’s dream of opening his own restaurant came true in 2023 with his acclaimed five star restaurant in Mayfield Gardens, specialising in a fine-dining take on Indian.
At ESF, Haldi uses the same quality ingredients, reimagined in authentic street food typically served on the streets of Delhi.
